Il Biscotto di Sant’Antonio

C’era una volta il biscotto di S. Antonio…. e c’è anche adesso, preparato con sapienza dal maestro fornaio Ferruccio. Lui racconta che lo mangiava da piccolo, quando nel periodo che precede la festa del Santo, il 17 di gennaio, veniva preparato in tutte le case e perciò anche da sua madre. Si tratta di una preparazione tradizionale, una bellissima ciambella dolce/salata, che prevede una lavorazione complessa, addirittura con una fase di bollitura che precede la cottura in forno. Non si sa se ancora oggi qualcuno lo prepari in casa, ma chi lo vuole assaggiare ha tempo di trovarlo da Ferruccio i mercoledì successivi, poi se ne riparlerà il prossimo anno. Affrettatevi, ne vale la pena.

Once upon a time there was the biscuit of S. Antonio…. and there is even now, expertly prepared by the master baker Ferruccio. He says that he ate it as a child, when in the period preceding the feast of the Saint, on January 17, it was prepared in all the houses and therefore also by his mother. It is a traditional preparation, a beautiful sweet / savory donut, which requires a complex process, even with a boiling phase that precedes cooking in the oven. It is not known whether anyone still prepares it at home today, but those who want to taste it have time to find it at Ferruccio’s on the following Wednesdays, then we’ll talk about it again next year. Hurry up, it’s worth it.
